Letting Your Grilled Foods Rest

You’ve just cooked up a bunch of burgers, a couple steaks, and some chicken and you are starving. The steaks are a perfect medium rare, the burgers smells great, and the chicken tastes wonderful because you already ate a smaller piece that strayed from the pack… you and your guests are ready to chow down, feeling cheated that so far because they’ve only gotten some potato and macaroni salad. Wait.

That’s right, wait a little bit. This is a little not-so-hidden secret of the grilling masters and it’s to wait a little bit after you’ve finished grilling up the foods to allow for the juices to settle back down into the center of the meats. If you’ve ever cut a steak in half, ever notice the pile of juices that collects at the bottom of the plate? By waiting, you let that juice settle into the middle of the steak or burger and give it a juicier mouth-feel.

So, while your guests may hate you right now… they’ll marvel at how juicy your steaks and burgers and chicken are.

    I couldn’t agree more. I find it less of an issue with ground meat, but just five minutes of resting, with a bit of aluminum foil over the meat to keep it from cooling too quickly, makes a huge difference on the plate and in the mouth.
