Ideal Steak Thickeness For Grilling: One Inch

This will allow the outside to get nice and seared while keeping the inside juicy and moist. The added thickness will also give you a bit of leeway when it comes to cooking. If you overcook it a little, no big deal. If you overcook a thinner steak, you’re eating jerky.
One bonus tip: Keep the fat on but keep it to 1/8th of an inch thick. Any thicker and it’s just extra grease, any thinner and you lose some potential favor. The ideal is an eighth of an inch.
