Did you know that grilling and barbecue’ing are two different things? The act of grilling is to cook something over an open flame, usually resting on a grill, hence the term. The act of barbecue’ing is actually smoking, that is to cook the meat on an indirect heat source that produces smoke and heat for a longer period of time.
That’s why at a BBQ joint you’ll see Beef Brisket and not Steak. A steak is a product of grilling, note the fine grilling lines. A brisket is a product of smoking/barbecue’ing. Usually something that’s smoked will be more tender (all over), contain more flavor, and be a bigger piece of meat. A steak, while it will be tender on the inside, will be a little tougher on the outside (simply because of the flame) than something that’s been smoked. The beauty of smoking is that depending on the type of wood you use you can get all sorts of great flavors into the meat.
