Whether your grill is a propane gas or charcoal briquette, it has different zones of temperature no matter what you do and it’s important that you take advantage of those zones if you want to master the grill.

On my grill, no matter what I do, the grill is always hotter on the left than it is on the right. The propane line comes in from the left so the left burner gets first crack at the fuel so it’s no surprise it is usually hotter there. So, to take advantage I usually try to sear my food on the left side of the grill and move them to the right in order to continue cooking them. Foods that I want to stay warm but not actually cook I put on the shelf or the far right side of the grill (where the burners are turned off).

On a charcoal grill, usually the center is the hottest because you’ve piled your pyramid there in the first place. As you move the coals around you should be able to feel the different zones by putting your hand over the grate. The more you grill the more you’ll understand where these zones are.
