New York gets all the good food, too bad I’m down here in Baltimore, MD. If you want Texas style BBQ, you have Hill Country in Chelsea, and if you want Georgian BBQ, now you have Georgia’s Eastside BBQ at 192 Orchard Street at East Houston.

You may have heard the rib tip of boiling your ribs before you grill them, which is an idea lauded by some and railed on by others, but Alan Natkiel, owner of Georgia’s Eastside BBQ, claims that the secret to Georgian BBQ is that you steam the meat (not boil!).

He slowly steams his dry-rubbed baby back ribs and pork shoulders over beer until the meat nearly falls from the bone, then finishes them on the grill. The meat is lush and tender, with heat from spices and a slather of his own edgy sauce.

The article continues to mention about two other BBQ joints, Oklahoma Smoke BBQ (231 West 145th Street) and Memphis-inspired Southern Hospitality (1460 Second Avenue), owned in part by Justin Timberlake. At the moment, Oklahoma Smoke BBQ is more like a take-out place as it only has six seats but they’re making renovations to handle more seating.
